There is just something about convenience foods that bother me.  Mostly it’s that they are very expensive (more expensive than the ingredients should cost), but also because you never know what additives that have been added.  In many cases, making homemade mixes cost less and are healthier – and are lower carb (not to mention that they usually taste better).

This Baking Mix can be used in place of Bisquick, Jiffy Mix or Carbquik.

I recently came across the most delectable cookie recipe.  It’s really incredibly good and amazingly simple to create.  Cheesecake in a cookie … yummmmm!

The recipe can easily be doubled … I have to double the recipe so that I have enough cookies left over after I finish baking them – to make it through the week for both my husband and myself!  :-)

One of the things that I miss the most while on a low-carb food plan is the All-American Hamburger.  While over on Low Carb Friends website, I saw a thread talking about Wendy’s burgers.  My mouth started to water because I’m thinking – how in the heck did they have a burger.  I mean I’ve taken everything out of the bun and eaten it with a knife and fork, but seriously … it’s just not the same.  It’ll do … but it’s not the same.

So, back to the point – the thread I was on gave a wonderful recipe for a Low Carb Sandwich Roll that everyone was raving about.  Figured I’ll have to give it a try.  Maybe I’ll sneak out for a Whopper or Arby’s and enjoy picking it up with my hands and eating it like it’s supposed to be eaten (but without the carbs)!!
